Yesterday I had some of my girl friends and their babies and kids over for a play date and lunch. When making lunch for some who have food allergies and for kids it makes it a little tricker to decide what to serve. The forecast was calling for rain but I was praying against that so we could enjoy whats left of summer and eat out on the patio. Well it started off overcast but quickly the sun started to shine, it got hot out and I was a happy girl! I decided to try a new salad to serve for lunch along with some other goodies. I love salad and love adding new things to my salads to make them interesting. From what I heard from my girl friends, it was good. I enjoyed it and plan on making it again. It was fairly simple – which I love and I wouldn’t say it was full of calories either.
BLT CHOPPED SALAD
Ingredients
- 4 slices Sliced Bacon, diced
- 4 cups chopped romaine lettuce
- 1 avocado, halved, seeded, peeled and diced
- 1 cup cherry tomatoes, halved
- 1/2 cup corn kernels
- 1/4 cup crumbled goat cheese
For the Lime Vinaigrette
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar
- Zest of 1 lime
- 2 tablespoons freshly squeezed lime juice
- 2 teaspoons sugar (or more to taste I used Stevia instead of sugar)
Instructions
- To make the vinaigrette, whisk together olive oil, apple cider vinegar, lime zest, juice and sugar in a small bowl; set aside.
- Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
- In a large bowl, combine romaine lettuce, avocado, tomatoes, corn, goat cheese and bacon. Stir in lime vinaigrette.
- Serve to your guests
